MIXED VEGETABLE SALAD
Ingredients-enough for 6 people
3 large tomatoes
1 cucumber
1 bunch spring onions
3 small/2 large carrots
2 green peppers
1/2 lettuce
a handful spinach leaves
2 lemons
olive oil
salt
Eqipment:
small sharp knife
cutting board (or a plate)
salad bowel
wooden mixing spoon
Method:
- Wash all vegetables properly and then dry them
- Chop up tomatoes, cucumbers, carrots and green peppetrs in to small diced shapes and mix in a salad bowel
- Shred the lettuce, spinach leaves and slice the spring onions. Place in the salad bowel and mix with other vegetables
- Add the olive oil to your choice
- Chop the lemons in half and squeeze all the juice of the lemon on the vegetables
- Add salt to the amount that you prefer (optional)
- Mix all the ingredients with the wooden spoon and chill in the fridge until serving time
